Fruity Birthday Pancakes

 

What do you do when your little one wants to start her 7th BIRTHDAY celebrations at 8am?

Make BIRTHDAY PANCAKES, of course!

Recipe:

3 eggs separated
250ml milk
100g probiotic full-fat yogurt
160g brown flour
1 ½ tsp baking powder
pinch of salt
2 handfuls of berries (crushed with ah fork)

You’ll need three medium bowls:

  • In bowl #1: Whisk the egg whites until soft peaks form and set aside.
  • In bowl #2: Whisk the egg yolks, yogurt and milk and add the crushed berries
  • In In bowl # 3: Mix flour, baking powder and salt.

Now, pour bowl #3 into #2 and mix LIGHTLY. Add #1 and gently FOLD in the egg whites Heat a smidgen of clarified butter, coconut oil or rapeseed oil in a frying pan and drop a ladleful of the batter into the hot pan. Once bubbles rise to the surface, flip over and cook for another minute. Serve straight away with loads more berries, maple syrup and, of course, birthday candles!

Healthy Eating Note: These pancakes make a deliciously balanced breakfast  as they have complex carbs from the brown flour and berries, protein from the eggs and yogurt and fat from the full fat yogurt. They also have lot of antioxidants from the berries and a good helping of calcium. Perfect way to start a busy day!
